Taylor Swift Chai Sugar Cookies with Eggnog Icing

I had to “Speak Now” because “I’m so in love that I might stop breathing” I’m talking about the cookies! Me and my two daughters made the Taylor Swift cookies! They were so delicious and perfect for the holidays! Made me feel like I could put the Christmas lights up in October. 😉 I had to hop on and share the recipe with you all! It’s so simple!



For the Chai Cookies:

1/2 cup softened butter

1/2 cup vegetable oil

1/2 cup white sugar

1/2 cup powdered sugar

1 large egg

2 tsp. vanilla extract

2 cups all-purpose flour

1/2 tsp. baking soda

1/4 tsp. salt

1 chai tea bag


For the Eggnog Icing:

1 cup powdered sugar

1/4 tsp. ground nutmeg

1/4 tsp. ground cinnamon

3 Tbsp. eggnog


INSTRUCTIONS

1. In a medium-sized bowl with a hand mixer, cream the softened butter until creamy. Add vegetable oil, white sugar, powdered sugar, egg, and vanilla extract.

2. Beat that until combined, then add in the dry ingredients: all-purpose flour, baking soda, salt, and the contents of 1 chai tea bag.

3. Beat that again until a very soft dough forms. Cover the bowl with plastic wrap, and chill in the fridge for at least 1 hour.

4. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

5. Scoop out 12 cookies onto the lined baking sheet, and bake at 350 degrees for about 13 minutes. Let the cookies cool while making the icing.

6. To make the Eggnog Icing, whisk together powdered sugar, nutmeg, cinnamon, and eggnog.

7. Spoon the icing over the cooled cookies, sprinkle with a bit of cinnamon, and let the icing harden for about 10-15 minutes.

8. Enjoy!
